Culinary Farms Tomato Harvest: Ripe for the Picking!

Each year at Culinary Farms, a quiet drama unfolds in the fields, where we race against time, weather, and the whims of nature to harvest 125-135 acres of Roma variety tomatoes in order to turn them into the most flavorful dried tomatoes perfect for numerous applications.  Starting in late July, the tomato harvest usually stretches into October, but this is ultimately dictated by the first frost. Each year, it’s a balancing act, and this season has been no exception.

This year’s season has come with its own set of challenges and opportunities. Excessive heat—temperatures exceeding 100°F for over three weeks—hit hard in June. Yet, unlike other years when water was scarce, higher water levels this season allowed us to compensate by providing the crops with extra nutrients and irrigation.

The Secret Sauce of Quality Tomatoes

Not all tomatoes are created equal. In fact, a lot of science and precision goes into producing tomatoes that are prime for drying. While flavor is a key factor, we measure quality by so much more: appearance, firmness, aroma, and size all play a role. But at the heart of it? Solids and brix levels—the hidden heroes of a truly exceptional tomato. Solids tell us how concentrated the fruit is, and brix measures its natural sweetness. We place a significant focus on these levels—two measurements that help gauge the tomato’s sugar content and overall concentration. For solids, we seek readings above 20, while brix levels must hit at least 5. These metrics ensure that the tomatoes we harvest are rich in flavor and ready to be harvested and dried. These numbers are what separate an average tomato from one bursting with flavor, ready to be transformed.

Behind the Scenes: The Battle to Harvest

Reaching that pinnacle of tomato perfection isn’t easy. It’s a battle fought with machines, minds, and an unwavering focus on quality. Our mechanical harvesters—complete with eye sorters—scan each row, removing debris and discarding inferior fruit.

The real challenges? Weather and pests. These are the wild cards. Too much rain, not enough rain, searing temperatures—any one of these can turn a promising crop into a disaster. Pests don’t rest either; they creep in, threatening to destroy months of hard work. But we don’t back down. Despite these challenges, our team remains committed to ensuring that only the best tomatoes make it to harvest.

The Art of Timing: Harvesting at the Perfect Moment

Timing is everything. Our fields are under constant watch, with teams conducting site reviews and discussing every detail with field supervisors. We don’t just look at tomatoes—we taste them, smell them, feel them. If the tomatoes aren’t at peak ripeness, we wait. If a field isn’t performing, we move. If a grower can’t deliver, we switch. Nothing is left to chance because consistency is king. When the moment is right, we strike. Our tomato trailers sweep in, gathering the crop at its absolute best.
